Gluten Free Egg White Muffins
Here is a super easy recipe that is perfect for a pre-workout snack/breakfast. I always break my breakfast into two parts, something small before my workout and a protein shake after. This recipe works perfectly. I always prep them ahead on Sunday and store them in the refrigerator for the week.
Ingredients:
- 12 egg whites
- 1/4 cup coconut flour
- 1/2 tbs. vanilla
- 1/2 tsp. baking powder
- cinnamon
- 1 tsp. stevia (optional)
Directions:

- Preheat your oven to 350 degrees
- In a mixing bowl whip together all ingredients using a hand mixture until mixture is frothy
- Pour into well greased muffin tins (I used Trader Joe’s coconut oil spray) filling about halfway
- Bake at 350 degrees for 20 minutes
